Wellness Wednesday: Roasted Garlic Cauliflower Soup

OMG this was freaking heaven in a bowl!  My son (8) liked it.  My daughter (7) LOVED it, as did my wife and I.  Unfortunately it was our daughter that chowed it all down.  Dinner, then lunch and dinner the next day!  Here's how we made it:

Who the hell doesn't love garlic???
First:
In a pan with 2 tbsp of olive oil press in 3 cloves of garlic and brown them, then remove from heat and save for later.
Is it ready yet? No.

In a large pot boil:
4 Cups of Vegetable broth
8 ounces of cauliflower
Some thyme (we put in just a touch, but it was goooooood)
4 oz cheddar (leave this out if you want it vegan!  We do love our cheese...)




Go ahead, blend the
crap out of it...


When the cauliflower is soft, place about 2 cups at a time into the blender and blend until it's mashed into oblivion.

NOTE!  When you blend something that is this hot, it can force some to shoot out of the top of the blender.  Please put a cloth over the top so you don't get burned...not that that happened to me...no, never, nada! Quit asking!  Ok, it was me...

When it's all back in the pot, add the garlic and let it simmer for a bit.





Then, serve with warmed chiabatta (spelling????) bread, lightly buttered.  Yummmmmmmmmm....
All done!  Pure awesomeness...

  3. I love cauliflower. I started roasting some a while back and I couldn't believe ow good it was. Gotta try this one day.
